n the heart of Almaty, Kazakhstan’s former capital, Café Alma is more than a bistro-style restaurant where European classics meet local cuisine. Behind the scenes, its compact yet highly efficient kitchen tells a story of collaboration between Silko, Bioshop and Café Alma, combining Italian manufacturing excellence, local expertise and a chef-led vision of quality. With its striking Soviet-era aesthetic and warm atmosphere, the restaurant also benefits from

being part of the ABR Group, one of Central Asia’s most dynamic hospitality groups. The group includes more than 15 restaurant concepts, each exploring new dimensions of taste, culture and dining experiences. The ingredients for success are clearly in place. The kitchen itself, however, measures approximately 17 square meters. Despite its small footprint, it relies on a full Silko setup to deliver an ambitious menu spanning breakfast, brunch, pastries and evening dining.

Dishes include horsemeat stroganoff and steak, hummus and mushroom ragout, a Soviet breakfast featuring Doctor’s sausage, and paccheri pasta with shrimp.

Seamless working “High-performance equipment was absolutely essential for us,” says chef Andrey Titov, head chef at Café Alma. “In such a small space, Silko equipment has been a real godsend, working together seamlessly.” The team has integrated multiple Essence 700 Series equipment, including induction hobs (4 zones x2), an electric pasta cooker (1 well – 42 liter), an electric deep fryer (double well – 22+22 liter), a 1,200mm griddle, a neutral element and refrigerated drawer bases (under the griddle and inductions). This allows prepared ingredients to be stored directly below the cooking line. For a high-volume restaurant with fast service demands, this configuration maximizes
