were appointed by EXA Group, the project’s general contractor and our partner in the realization of the development,” says Alessandro D’Andrade, general manager, Grandimpianti. Grandimpianti serves as a strategic partner in the

professional foodservice sector, specializing in the supply and coordination of high-performance kitchen and foodservice equipment for complex developments. “We support projects from the technical planning phase through to installation and commissioning, ensuring operational efficiency, durability and compliance with the highest standards,” says D’Andrade. “Our expertise covers hospitality, mixed-use developments, retail food halls and large-scale urban regeneration projects such as WaltherPark.”

A game of specifics Equipment was carefully selected from across Ali Group’s portfolio, including Mareno cooking systems, Esmach and Alphatech bakery equipment, Convotherm® combi ovens and Merrychef®

high-speed ovens. Cold-

chain management was supported by refrigeration solutions from Friulinox, Tecnomac and Polaris, while Hiber blast chillers preserved food quality and Scotsman ice machines served beverage and bar areas. The project was further complicated by significant logistical challenges stemming from the construction site’s central location in the city. In addition, delays during the base- building phase meant the teams began work more than a month behind schedule, despite a fixed opening date. “Despite the demanding timeline, safety and

quality remained our top priorities, and the final result reflects that commitment,” says Feola. “We established a strong and effective partnership between EXA Group, the client and all project stakeholders, which proved essential to the project’s success. Successfully delivering highly customized units — both technically and aesthetically — within the required timeframe, is a testament to the strength of the collaboration and the commitment of everyone involved,” he adds.

“Thanks to an exceptional level of teamwork, coordination and dedication, it was nonetheless possible to deliver and open this remarkable new place on schedule,” says Chavanat. “We are proud because we realized the promise to bring something completely new to Bolzano: a new place with a unique atmosphere and great partners,” he adds.

each bottega to maintain its unique culinary identity, while ensuring consistent professional standards and operational efficiency throughout the food hall. And the successful collaboration extended beyond the food hall itself. One notable example was ‘Mochi Sushi. Grill. Rooftop Bar,’ located within the Falkensteiner Hotel Bozen WaltherPark and operated by the Falkensteiner. The high-end foodservice concept was designed

by hospitality consultant Mirko Predenz. To realize this vision the project brought together leading South Tyrolean partner Niederbacher — responsible for the complete organization and installation of the professional kitchen equipment — and kitchen equipment specialist Ambach, to create a highly customized kitchen environment tailored to the demands of Japanese cuisine. Flexible equipment solutions enabled seamless integration while meeting the restaurant’s specific operational requirements. The Ambach System 850 range’s modular construction could be configured to meet a variety of operational requirements and spatial constraints while maintaining energy efficiency to help reduce operating costs and environmental impact. The suite features, among other things, a full-

surface induction hob, a two-tank fryer with electronic EC control and an integrated oil filtration system, and a tempura fryer specifically designed to meet the rigorous standards of the authentic Japanese tempura. For Grandimpianti, it was clear from the outset

that all stakeholders shared a focus on long-term performance, operational reliability and brand positioning. This alignment laid the foundation for a highly collaborative partnership throughout the project. Reflecting on the project, Feola highlights the

collaborative effort that made it possible to meet such a demanding opening deadline. “Delivering such a complex project within such a demanding timeframe required an exceptional team effort. The commitment and collaboration shown by everyone involved was key to achieving this result, and we are proud of what was accomplished together,” says Feola. “Projects of this caliber are built on trust and technical competence,” says D’Andrade. “We value relationships where we can contribute not only as suppliers, but as technical advisors. We certainly remain open to future collaborations within similar mixed-use or hospitality-driven developments.”
