he phrase “An Guadn” is familiar to people from the southeastern part of Germany — it means “enjoy your meal” in the local Bavarian dialect. The company that bears the name aims to deliver high-quality Bavarian cuisine to residents in 60 nursing and residential care
facilities across the region. Part of the family-run Pichlmayr Group, the business sums up its approach to food with one simple phrase: “Bayrisch, Regional, Gut” (Bavarian, Regional, Good). Its focus on flavor and quality distinguishes it, but maintaining those standards across so many facilities is no easy task, requiring the founders to give careful thought to their meal distribution system. “We always had a big challenge in delivering meals to the residents, so we decided 10 years ago
An Guadn now has more than 150 temp-rite trolleys in operation
to go with a cook-and-chill model,” says Johannes Pichlmayr, An Guadn’s managing director. “We want people in these homes to have good, fresh meals with the taste and culture of home, not the frozen meals they would get elsewhere.” Traditional Bavarian food is hearty, rich and
rustic, with a strong emphasis on meat and sweet dishes. Pork, dumplings and beer-based sauces are common. Signature dishes include schweinshaxe, a crispy pork knuckle; weisswurst, a traditional white sausage; knödel, potato or bread dumplings; obatzda, a popular cheese spread; and kaiserschmarrn, a much-loved dish of scrambled sweet pancakes. “Older people in the homes know this
traditional cuisine, though the people who work there and the people who visit want something more modern. So we have to offer a wide spectrum of meals,” says Pichlmayr. “We have to think of it more like a healthcare setting and we have clients who have special dietary needs, so we must work with the doctor and the nursing home to create special meals.”
Cook-and-chill brings consistency The cook-and-chill system ensures meals remain fresh and flavorful, even when delivered to residents located far from the central kitchen in Moosburg an der Isar, which serves care facilities within a 150-kilometer radius. Chilled meals can be delivered a day in advance. Previously, the company operated a cook-and-serve system across 12 sites, creating significant logistical challenges. By contrast, cook-and-chill has proven both more reliable and more flexible. This is due in part to the high performance
of temp-rite International’s Temp-Classic Pro M buffet trolleys, which form the backbone of the meal distribution process. “The introduction of the central cook-and-chill system increased
