elebrate the new season in style and make some of your favourite cupcakes or a


striking centrepiece bake, then follow Cassie’s steps to adorn them with beautiful spring blossoms. Wilton’s pre-made buttercream is the perfect consistency and as they’ve done the tricky part for you, you can spend more time doing the fun bit – decorating!


Spring cake


You will need


For the cake l Pre-iced cake l 1in hexagon shape cutter l Wilton yellow food colouring l White sugar paste l Rolling pin l Non-stick board l Water brush


For piping the flowers l Wilton disposable piping bags l Wilton pre-made buttercream l Wilton yellow, green and violet food colours l Nozzle no 103, 81, 67 l Wilton pallet knife l Wilton nail and small squares of greaseproof paper


Sweetspring baking

Mix a small amount of yellow colouring into some sugar paste about the size of a golf ball.


To make three shades, I started with a dark yellow ball. I split this into three different sized balls and added white sugar paste to each to make them all the same size.

Roll out the darkest yellow sugar paste to a thickness of about 1mm then cut out the


hexagon shapes. I have cut out about 30 of this colour as I want to make two rows around the bottom of the cake.


Brush a little water onto the back of the hexagon, and place at the botton of the


cake with the point of the hexagon at the bottom. Add more shapes in the same way, leaving a 2mm gap inbetween the shapes to show a little of the white icing underneath.

Repeat this process with the next darkest paste,


so that you have two layers around the middle of the cake. Next, add one layer of the lighter coloured paste around the top edge of the cake.


Colour some buttercream with


green food colour and use a pallet knife to half fill a piping bag with Wilton nozzle 67. Hold the piping bag so it’s almost touching the cake and squeeze until the buttercream starts to come out. Move the nozzle away to create a point to the leaf. Pipe randomly over the top of the cake to cover with a leaf effect.

Pipe four bluebells randomly on top of the leaves, and three daffodils so that they


overlap the bluebells.
