turns a caramel colour when roasted at a low temperature and Valrhona has launched a trend for caramelised white chocolate with its Dulcey Blonde Chocolate bar. San Francisco-based bakery Craftsman and Wolves also has its Blond Chocolate Raspberry Bar, using the same chocolate. Building and layering flavours is a trend that has underpinned some recent quirky new product launches. This includes beer and chocolate (as seen in the Netherlands with Voor Jou’s real Belgian chocolate glasses of beer), red wine and marzipan (as seen in Germany by MK Mark Chocolate), smoked BBQ potato chips (as seen in Wild Ophelia’s dark chocolate bar) and many other fun products that demonstrate the extent to which chocolate serves as a great base for complex flavours. •
