Equipment Serves: 10–12 55 mins


In a one-hour class, spreading chocolate spread onto the warm cake works well. If your class is longer, make buttercream icing or whip some cream and add it to the cooled cake.


Ingredients


FOR THE CAKE: 225 g soft butter


225 g sugar 5 eggs


100 g self-raising fl our 250 g drinking chocolate


FOR THE ICING: chocolate spread/ butter icing (see Recipe 19)/200 ml single cream (whipped)


Weighing scales, greaseproof paper, scissors, pastry brush, mixing bowl, sieve, electric whisk/food mixer, spatula, two 8” cake tins, oven gloves, wire tray, cutlery, two large plates (for cutlery).


Method 1. HANDS, APRON, EQUIPMENT and SET UP UNIT.


2. Preheat the oven to 190°C/gas mark 5. 3. Weigh and measure all ingredients.


4. Grease the base and sides of the tins with oil/butter. Cut circles of greaseproof paper and line the base of each tin.


5. Put the softened butter, sugar and eggs in the mixing bowl. Sieve in the fl our and drinking chocolate. This is known as the all-in-one method.


6. Using the whisk, mix the ingredients thoroughly. Use a low speed at fi rst until the ingredients are combined and then increase the speed.


7. Scrape the bowl down with the spatula and then give another brief mix.


8. Divide the cake mixture into the tins and cook for 25 mins. 9. When cooked the cake will have a slight wobble in the middle.


10. Remove from the oven using oven gloves. Cool the cakes in the tins for 10 mins and then turn onto a wire tray to cool fully.


11. Decorate the cake. UNIT 3 85


TOP TIP The texture of this cake is


similar to a brownie. Due to this and the small quantity of flour


used in this recipe, this is an ideal cake to make for a coeliac with gluten-free flour.
