For one-hour classes: Pastry freezes very well. Make the pastry, then freeze. Thaw out before the next Home Economics class and make quiche, apple tart or sausage rolls, or if class is the next day, simply place the pastry in the fridge overnight.
Shortcrust Pastry 20 mins
for 200 g–220 g shortcrust pastry
Shortcrust pastry is a pastry made from fl our, fat (butter/ margarine) and a little cold water. It has a crumbly texture. It is used in the making of tarts, pies, sausage rolls, fl ans and quiches. See the shortcrust pastry ingredients list for each separate dish and use the method given here.
Equipment
Mixing bowl, sieve, butter knife, fl our dredger, cling fi lm, small jug, cutlery, two large plates (for cutlery).
Method 1. HANDS, APRON, EQUIPMENT and SET UP UNIT. 2. Weigh and measure all ingredients.
3. Sieve the fl our and salt into the mixing bowl. Rub in the butter/ margarine with fi ngertips until it resembles breadcrumbs.
4. Add the cold water slowly and stir with a butter knife until it forms a soft dough.
5. Turn onto a fl oured board and knead lightly. 6. Wrap the pastry in cling fi lm and put in the fridge.
Quiche Equipment
Chopping board(s) (colour-coded), sharp knife, weighing scales, grater, measuring jug, fork, frying pan, 10” quiche dish, greaseproof paper, baking beans, mixing bowl, fl our dredger, oven gloves, cutlery, two large plates (for cutlery).

Make pastry in advance to save time.
2. Preheat the oven to 200°C/gas mark 6. 3. Weigh and measure all ingredients. 4. Grease the quiche dish using a little butter/margarine.
5. Remove the pastry from the fridge and roll out on a fl oured table. Line the 10” quiche dish with the pastry and trim the edges while leaving a slight overlap. Line with greaseproof paper and fi ll with baking beans. Bake blind for 10–15 mins.
6. Peel and fi nely chop the onions. Chop the streaky bacon into cubes.
