This would also be an ideal recipe to prepare when cooking the quesadillas (see Recipe 5).

Smoothies Ingredients


150 g frozen or fresh fruit. Banana, berries, mango, kiwis, peaches, plums, melon and nectarines all work well. (If the fruits being used are a little sour, 1 to 2 teaspoons of honey or maple syrup can be added to sweeten the smoothie.)


300 ml juice 125 ml yogurt


fresh mint (optional, to garnish)


Milkshakes Ingredients


250 ml milk


Choose one of the following: 2 bananas/200 g strawberries/200 g raspberries


1 tsp honey (organic if possible)


2 generous scoops vanilla ice cream (or another preferred fl avour)


Equipment


Chopping board(s) (colour-coded), sharp knife, weighing scales/ jug, peeler, food blender/smoothie maker/hand blender, tall serving glass, paper/metal straw, cutlery, two large plates (for cutlery).


Method 1. HANDS, APRON, EQUIPMENT and SET UP UNIT.


2. Weigh the fruit. 3. Measure the yogurt and fruit juice.


4. Wash or peel and roughly chop the fruit. Do not forget to remove the stones from the fruit.


TOP TIP


Smoothies are very quick to make. Remember that


other ingredients can also be added such as oats, spinach, avocado and flaxseeds to


further increase the nutritional benefits of the drink.


5. Put the fruit, juice and yogurt in the food blender/smoothie maker and blend until it is smooth. If you do not have a food blender/smoothie maker, put the ingredients in a large bowl and blend using a hand blender.


6. Serve in a tall chilled glass with a straw. Garnish with a sprig of fresh mint.
