2 Pancakes with Simple Blueberry and Banana Sauce

Perfect dish for all class lengths. Ingredients


FOR THE PANCAKES: 125 g fl our


2 eggs 250 ml milk


FOR THE BLUEBERRY AND BANANA SAUCE:


125 g blueberries 2 bananas


1 tbsp water/juice


oil/butter/coconut oil for frying


Method 1. HANDS, APRON, EQUIPMENT and SET UP UNIT.


2. Weigh and measure all ingredients. 3. Sieve the fl our into the mixing bowl. 4. Make a well in the centre and crack in the eggs. Mix with a whisk.


5. Add the milk a little at a time, whisking after each addition to ensure a smooth consistency, until all the milk is added. Set aside.


6. Wash the blueberries, peel and slice the bananas.


7. Add the blueberries, bananas and water/juice to a pot. Bring to the boil, put on the lid and simmer for 3–5 mins until the blueberries are ‘bursting’ and the bananas have softened but are still holding their shape. Turn off the heat.


8. Bring the pancake batter to the hob.


9. Heat a small amount of the oil/butter/coconut oil in the frying pan.


10. Add a ladleful of batter and carefully lift and tilt the pan to spread the batter so that a thin layer is created.


11. Cook until bubbles appear on top.


12. Flip it over using a fi sh slice or spatula and cook for another minute. The pancake should be golden in colour.


13. Remove to a clean plate. 14. Repeat steps 9–13 until all the batter is used. 15. Serve pancakes in a stack with the sauce on the side.

Chopping board(s) (colour-coded), sharp knife, weighing scales, measuring jug, mixing bowl, sieve, whisk, frying pan, ladle, fi sh slice/ spatula, plate, gravy boat (for sauce), cutlery, two large plates (for cutlery).

TOP TIP If you are worried about your


chosen fat making your pancakes greasy, a spray oil can be used


for each pancake instead. There is a wide variety of these spray oils available – coconut or olive oil spray both work well.
