28 Trendy Bread and Butter Pudding Learning Intentions

Equipment


Chopping board(s) (colour-coded), sharp knife, weighing scales, rectangular ovenproof dish, butter knife, grater, mixing bowl, whisk, saucepan, oven gloves, cutlery, two large plates (for cutlery).


Serves: 6 50 mins–1 hr


In a one-hour class, bring in your own fl an dish, ovenproof dish or cheese cake tin and collect from the Home Economics kitchen before going home.


Ingredients


50 g butter, and extra for greasing


8 slices white sliced loaf (brioche, hot cross buns and croissants are also suitable)


100 g sultanas/raisins/ mixture of both


grated rind of 1 lemon/ 1 orange


1½ tsp cinnamon 1½ tsp nutmeg


3 whole eggs, plus 1 egg yolk


70 g caster sugar 250 ml milk 300 ml cream 1 tsp vanilla extract 1 tbsp sugar to sprinkle


Method 1. HANDS, APRON, EQUIPMENT and SET UP UNIT.


2. Preheat the oven to 180°C/gas mark 4. 3. Weigh and measure all ingredients. 4. Grease your dish with a little butter. 5. Butter the bread and cut each slice into four triangles.


6. Zest the lemon and mix it with the cinnamon, nutmeg and dried fruit.


7. Place a layer of the bread slices in the bottom of the dish, butter-side down. Sprinkle half the dried fruit and spice mixture over this layer.


8. Use the remaining bread for the second layer and the remaining dried fruit and spice mixture with this layer.


9. Beat the eggs and sugar together with a whisk.


10. Pour the milk and cream into a saucepan and heat until steaming, but do not boil.


11. Pour the milk and cream mixture over the eggs and sugar, whisk gently until smooth and add the vanilla extract.


12. Pour this mixture over the bread. Sprinkle a tablespoon of sugar over the top.


13. Place in the oven for 30–35 mins until set and turning brown on top.


14. Remove from the oven using oven gloves and serve hot, accompanied with a scoop of ice cream or freshly whipped cream.

TOP TIP Fresh or dried blueberries


can be used as an alternative to sultanas/raisins. Grated


chocolate or chocolate chips can be added to bread and butter pudding for an even sweeter twist!


TOP TIP It is important that you do not


allow the milk and cream to boil, as you might burn it and cause a film to form on top. As well


as that, you might have a hob to clean up if the milk and cream boils and bubbles over!
