Junior Cycle Home Economics Recipe and Evaluation Handbook 13 Oat Bread Learning Intentions

Equipment Serves: 8–10 1 hr
For one-hour classes, use a loaf tin liner to save on wash-up. The bread can also be collected at lunch time.
Ingredients
1 large tub natural yogurt (500 ml)
1 tsp bread soda 1 egg
1 tbsp treacle
2 large tubs porridge oats (use empty yogurt tub to measure this)
50 g seeds/nuts/raisins/ cheese, etc. (optional/to garnish)
Mixing bowl, sieve, wooden spoon, metal spoon, loaf tin, pastry brush/loaf tin liner, oven gloves, wire tray, cutlery, two large plates (for cutlery).
Method
1. HANDS, APRON, EQUIPMENT and SET UP UNIT.
2. Preheat the oven to 190°C/gas mark 5.
3. Line the loaf tin with loaf tin liner or grease with a little oil using a pastry brush.
4. Empty the yogurt into the mixing bowl. Sieve in the bread soda. Add the egg and treacle and stir the mixture until it fi zzes. This indicates that the raising agent has been activated.
5. Use the empty yogurt tub to measure the oats. Add the two tubs of oats and any optional ingredients and mix well.
6. Spoon the mixture into the loaf tin.
7. (If using) Sprinkle some seeds on top to garnish.
8. Place in the oven for 45 mins. The bread will darken on top.
9. Remove from the oven using oven gloves. Check for doneness by tapping on the bottom of the loaf – a hollow sound indicates doneness.
10. If done, leave to cool on a wire tray. 11. Serve in slices with your favourite topping.

this a great introduction to bread-making for younger members of the family.
TOP TIP Loaf tin liners are very
convenient when cooking this bread in school. Limited class time means that the bread can be removed at the end of class but the tin should remain clean!
