49 Savoury Omelette Learning Intentions

15 mins Perfect dish for all class lengths. Ingredients 3 eggs 1 tbsp milk salt and pepper to taste
30 g grated Cheddar cheese
1 tbsp olive oil/1 tbsp butter
chives/fresh parsley (to garnish)
A variety of food are suitable as fi llings for a savoury omelette. With your cooking partner, choose a selection of meat and/or vegetables to make your omelette.
MEAT OPTIONS:
25–30 g smoked pancetta 25–30 g sliced ham 25–30 g cubed bacon 25–30 g diced chorizo 25–30 g smoked salmon
VEGETABLES OPTIONS: 1 spring onion
¼ red/yellow bell pepper 2 mushrooms 2–3 baby tomatoes ½ avocado

Chopping board(s) (colour-coded), sharp knife, fork, tablespoon, frying pan, measuring jug, small mixing bowl, spatula, plate to serve, cutlery, two large plates (for cutlery).
Method 1. HANDS, APRON, EQUIPMENT and SET UP UNIT. 2. Weigh and measure all ingredients.
3. In a mixing bowl, gently beat the eggs together with the milk (optional), using a fork. Add salt and pepper to taste.
4. Optional ingredients: Dice/cut meat into small cubes/slices. Wash, top and tail the spring onion and chop into fi ne circles. Wash, deseed and fi nely slice or dice the pepper. Wash mushrooms, remove stalk, slice and dice. Wash and slice the baby tomatoes. Halve the avocado and remove the stone, scoop out, slice and dice.
5. Heat a medium-sized non-stick frying pan over a medium heat and heat the olive oil/melt the butter. Gently fry your chosen optional ingredients for 3–4 mins, remove from the pan and place in a bowl.
6. Pour the egg mixture into the pan and allow to cook for 10–20 seconds.
7. When you see the egg start to fi rm up, sprinkle the cheese and optional ingredients on one half of the omelette. Use the spatula to ease the edge of the omelette (with no toppings) and fold this over.
8. Leave to cook for a further minute to melt the cheese.
9. Serve immediately, garnished with the chives/fresh parsley.
