1 (16 oz) pkg Nature’s Promise® Organic Shelled Edamame 1 lemon
¼ cup fresh parsley plus extra for garnish
¼ cup tahini
1 tbsp minced garlic ½ tsp ground cumin
5 tbsp olive oil, divided ¼ tsp smoked paprika
STEP 1 Heat the edamame according to package directions. Drain in a colander and run under cold water to cool. To the bowl of a food processor, zest half the lemon and squeeze all of the juice. STEP 2 To a food processor, add edamame, parsley, tahini, garlic, cumin, 4 tbsp water, and 4 tbsp oil. Season with salt and pepper. Purée until smooth. STEP 3 Transfer to a serving bowl and drizzle with remaining 1 tbsp oil. Sprinkle with paprika and garnish with parsley.
