There’s a Doctor in the House... Traford Murphy, Ballymaloe House WINNER ‘Bushmills Cocktail


Traford Murphy joined Ballymaloe House from Cask, Cork city earlier this year and this week at the prestigious Bar of the Year Awards #bar- awards18 became Bush- mills Cocktail Bartender of the Year 2018. Traford has brought his enthusi- asm and expertise in mix- ology to the Ballymaloe bar and taking inspira- tion and seasonal pro- duce from the Ballymaloe walled garden, Traford creates incredible season- al cocktails influenced by the fresh produce availa- ble at Ballymaloe House.


Traford’s Bush- mills ‘Bar of the Year’ award-winning cocktails were called Bright Eyed and Bushy Tailed and Ju- lep 1608. For Bright Eyed


and Bushy Tailed, Traford used fruits and herbs to enhance the flavours that the Bushmills Red Bush whiskey receives from it’s time in wood.. add- ing woodruff

(grassy vanilla notes to enhance the vanilla fla- vours from ex-bourbon casks), rhubarb and sweet cicely cordial (sweet cice- ly introduces an anise fla- vour to counteract the ox- alic acid in the rhubarb to make the perfect balanced cordial), a dash of Poach- ers ginger ale to make it sparkle and to show how diverse Bushmills can be, making it the perfect sum- mer highball style cock- tail. This was served on a bed of earth with sweet cicely and rhubarb to rep- resent the garden beds.

Taking a classic and bringing it into 2018 Traford used flavours from local herbs to en- hance the flavours in the Bushmills Black Bush. Black Bush, brown but- ter fat washed px sherry (it is what it says, Tra- ford burnt butter to give a lovely oily mouthfeel to the drink), cocoa nib infused demerara (to en- hance the chocolate car- amel flavours in Black Bush), Barry’s tea (the perfect lengthener), choc- olate mint (a little known variety of mint found in the Ballymaloe Cookery school glasshouses).
