Procedure: Mix ingredients of phase A, one after another, while stirring. Add phase B while stirring and until xanthan gum is completely dissolved. Set pH value with phase C if necessary.

Procedure: Mix ingredients of phase A, one after another, and heat to 75˚C (167˚F) while stirring. Premix phase B, heat to 75˚C (167˚F) and stir until completely dissolved. Slowly emulsify phase B into phase A while stirring. Homogenise for 2-5 min by using an Ultra Turrax. Cool down to 35˚C (95˚F) and add phase C while stirring. Set pH value with phase D.
