The story of simit The simit is a circular seeded bread that enjoys enormous popularity across Turkey, Greece and much of the Middle East. Its nearest Western relative in terms of daily consumption is the croissant, pretzel or bagel. The simit’s proliferation and cultural importance across the region, however, is such that a simit can vary from place to place in size, crunch, chewiness, and various other characteristics. Simit Sarayı, “The World’s New Bakery Café Chain”, opened its fi rst store in 2002 with the aim of promoting the simit both within its home territory of Turkey and to the rest of the world. The very fi rst batch was baked in the original store in Mecidiyeköy in Istanbul and today Simit Sarayı serves more than 650,000 guests daily, with 10,500 employees in hundreds of stores in almost 20 diff erent countries.
