Mount Irvine Bay Hotel & Golf Club was the brainchild of Irishman Pat Coughlan, who had the idea to convert 156 acres of his Tobago coconut plantation into Tobago’s first major tourist development. Today the Mount Irvine Bay Resort is


a boutique 80-room beachfront hotel and championship golf course with wide-open spaces, beautifully landscaped gardens, engaging decor and breathtaking sea views. It remains a family-owned, independent property with visible reminders of Tobago’s colonial past. Relatives of arguably Tobago’s most famous export, the former Premier League footballer Dwight Yorke, have owned the resort for the past 34 years.

greets guests upon arrival at the resort’s well- appointed lobby. Before Pat Coughlan farmed coconuts on the Mount Irvine Estate, the land on which the resort now sits, and several hundred acres around it, constituted the Mount Irvine Sugar Plantation. According to resort staff, the statue’s name is Aquisia; and the sugar cane stalks around her pay homage to the resort’s plantation past. From the lobby it’s a short walk through the hotel and gardens to the stunning pool and unspoilt beach. Walking through the property is akin to


stepping back in time. The remains of the original 18th-century sugar factory complex form part of the building that today houses the resort’s spa. Remnants of a sugar plantation heritage can be seen throughout the grounds in the form of sugar boilers, hoppers, aqueducts and water tanks. Even Mount Irvine Bay Resort’s beach facility is built off the foundations of the storage depot where sugar was warehoused.


The resort’s main restaurant, aptly named


the Sugar Mill, is built around a 19th-century sugar mill, the largest one on the island. British parliamentarian Lord William Douglas, a former owner of the Mount Irvine Sugar Plantation, constructed the sugar mill in the 1820s. The restaurant is open on all sides with views of the resort’s pristine swimming pool and Buccoo Reef, Tobago’s marine park. Tropical birds frequently drop in to say hello during breakfast and liberate a stray piece of toast. Much of the produce served in the Sugar Mill


restaurant is grown on property. The resort maintains an extensive kitchen garden and even keeps a few chickens. Silt cleaned from the golf course dam is used to fertilise the garden. Banana plants located on the resort grounds provide the main ingredients for banana bread and green fig salad; while the coconut trees on the golf course produce the nuts from which the resort’s tasty coconut chips, served at the weekly rum punch parties, are derived.
