Procedure: Heat water at 70°C and disperse Avicel® PC 591 under mixing. Homogenize for 10 minutes under high speed. Premix xanthan gum and glycerin, add it to A1, and maintain mixing for 10 minutes. Heat B up to 70°C and stir until complete solubilization. Under high shear, add B (70°C) to A (70°C), and homogenize for 10 minutes. Cool under mixing up to 35°C, then add C and stir for 5 minutes. Complete cooling to 25°C under mixing. Properties: Aspect: White glossy emulsion pH = 5.8 ± 0.3 Viscosity Brookfield RV (spindle A, speed 5): approx. 28000 ± 3000 mPa.s after 24h

Procedure: Heat phase A1 at 70-75°C. Phase A2: Disperse gellan and xanthan gums into glycerin and then add into Phase A1, previously heated at 70-75°C. Phase A3: Heat water at 70°C and solubilize Amphisol® K. When A3 is homogeneous, add into A1+A2. In the melter, prepare phase B and heat at 70-75°C. Proceed with the emulsion at 70-75°C: under stirring (2000 rpm), add phase B into Phase A1+A2+A3. Homogenize for 5 min with rotor stator at 3000rpm. Cool under normal stirring and at about 45°C, add Phase C. Adjust pH with D. Cool under normal stirring until 25°C. Properties: Aspect: Fluid ivory emulsion pH = 5.5 ± 0.5 Viscosity Brookfield RV (spindle A, speed 5): approx. 9600 mPa.s after 24h
