together and Jonathan has an architect practice in Croatia and spends one week a month out there. Both suzie and Jonathan are studying for their Wine
industry exams to further their knowledge - words like ‘well-balanced’, ‘acidity’ and ‘aroma’ are a daily part of their lives - but Jonathan does get into trouble for saying a particular bottle is ‘yummy’; “sometimes it just is,” he says! So I wondered if Jonathan, Suzie and Juliet can have too much wine talk, tasting and drinking and when they get home their tipple of choice is actually a shandy!? Jonathan says when he and their Master of Wine go to London for wholesaler tastings they can get through over 100 wines between them so all they want when they get to the bar at Paddington station is a nice pint! although his “go to” wine is a white Burgundy. For Juliet it’s the finest claret and Suzie loves port! Now Jonathan and suzie are here, Juliet may take a step
back from the business and enjoy the new house which is being built for her on the farm (Jonathan and suzie are moving into the 17th century farmhouse). Jonathan explains why Juliet’s new home will come complete with a special 10°C fridge just for her white wine. “In this country we serve whites too cold and reds too warm. Most fridges are five degrees and most whites should be drunk at about 10 or it doesn’t allow the flavours to develop. You should actually get it out half an hour before you intend to drink it. With reds, they should be served at room temperature but that’s actually about 18 degrees rather than the 23 most of us have our homes!” Just before I left I plucked up the courage to ask the family what they think about ‘polluting’ good Champagne with a juice or fruit such as a Kir Royale or Peach Bellini but to my surprise they didn’t baulk at the idea. “It’s a shame to ruin a beautiful Champagne but as long as people are drinking it, it doesn’t matter how it goes down.” The Cellar has a couple of events coming up – one
