DP Supply products are allergen-free because they do not contain any protein – the coconut oil-based toppings can be used in desserts such as whipped cream alternatives, cake fillings and decoration, aerated desserts, mousses and ice cream. The company’s dairy-free alternative to whipped cream – a high-performance whippable topping base called TOPPICS 310 – creates a firm, high-aerated, whipped topping with a great mouthfeel, all the while keeping stable and whipped at chilled and ambient temperatures. This instant cappuccino base uses coconut oil with excellent whitening properties and a creamy mouthfeel. No additional dairy-free creamer is required but one can be added to create a specific sensory profile at the consumer’s discretion. In general, foaming creamers are based on dairy protein and other dairy components, which capture the gas and create a stable foam layer.
