We admire many of the smaller independent champagne producers, whose dedication to terroir when allied to both innovation and tradition shines through in the fi nal product – unique fi zzies at an affordable price. Maison Bruno Paillard is a family-owned ‘house’ founded in 1981, with exceptional vineyards and whose wines have a particularly strong identity, expressing the chalky character of northern Champagne. The Maison has an extensive portfolio of more than 100 plots, covering 34 hectares across 17 crus. For Alice, co-director with her father Bruno, the key is an “assemblage” approach to blending: of diverse crus, grape varieties and vintages. “It is about the constant desire to capture the quintessential fi nesse and elegance which champagne can bring when it is served with love and care.”


The ageing process for their fl agship offering Première Cuvée spends three years in the bottle on the lees (double the legal requirement), and with extra maturation for a minimum of six months in the cellar after disgorgement (eliminating deposits and yeast). Bruno Paillard pioneered disgorgement dating on the back label in 1983.
