Deli Dish of the Day: FINDING DARTMOUTH’S BEST HOME COOKS


A fabulous foodie hamper will be awarded for each category’s winner.


Remember to label your entry with your name and mobile/home telephone number. It would be helpful if you would include a list of ingredients, and a sentence or two about why you consider yours to be ‘traditional’

Entry is simple. Bring your product to the Green Room in The Flavel between 1 pm and 2.30 pm on Friday october 19th. The winners will be announced by 4 pm, and you are


free to collect your entry at any time between 4 and 4.30 pm.


At Dartmouth Food Festival, it’s not all about the professional chefs. This year we are once again running our competition to find Dartmouth’s best home cooks. Paul Greenfield and Alan Price, who run ‘Smith Street Deli’ have set a challenge to find the best homemade: • Traditional shortbread • Classic quiche lorraine You may submit entries for either or both categories.]


In the words of The Guardian “Shortbread has so few ingredients that you can’t get away with cutting corners.” There is a great deal of debate about the core ingredients – plain flour? cornflour? using rice or rice flour? certainly plenty of good quality butter and sugar - but whatever you decide to use, the judges will be looking for a product without added flavourings.


ClaSic Quiche LoRaine


For this classic ‘picnic hamper’ dish, the biggest debate amongst the experts seems to be whether or not to include cheese. For our purposes, many ‘classic’ recipes do – so if you think it enhances your entry, then over to you. The judges will be looking for a perfectly-set rich savoury custard filling encased in a crisp shortcrust pastry base. There should be sufficient bacon or ham to add character and flavour, and in terms of eating, it needs to be just as good cold as it is hot!
