Local Feature

Alessandro’s Hideaway, Richmond

W

e couldn’t resist sharing this hidden gem with you if you’re visiting Richmond at all this summer. Alessandro’s Hideaway is a Sicilian-inspired

restaurant where you can expect to receive the best service and the best Italian food. Over the years, the building has had many

uses. It started life as a stable and has evolved through various shops and cafes to its current form, and it will continue to evolve as the team continually strive to improve the facilities and expand the menu and wine list.

The restaurant has grown very quickly since opening in 2015 and this is because of its great reputation. The food speaks for itself and the team provide such a great service. The ingredients are all fresh and the chefs have the confidence to cook from scratch. Our top picks on the menu are from the fresh

seafood dishes, and the signature dishes. The drinks menu is also impressive with everything you could think of from sparkling wines to local ales and much more. As you know here at Yorkshire Dales, there is always room for dessert and the tiramisu is a must!

Recipe

We know that when you visit park, there’s nothing better than relaxing in your holiday home, so eating out isn’t for everyone, therefore we have put together a delicious recipe for you to try at home this summer.

Lemony chicken skewers, herbed new potatoes & apple slaw

Ingredients

• Boneless chicken breasts cut into cubes

• Marinade – yoghurt, 1 lemon, 1 garlic clove, tarragon

• Potatoes – 300g of new potatoes, parsley, mint, chives & 1tbsp olive oil

• Apple slaw – 100ml crème fraiche, mustard, chives, white cabbage, carrot, green apple (all roughly chopped or grated)

Method

1. Cover chicken in marinade, cover and set aside

2. Put potatoes on to boil and cook until easily pierced with a fork – roughly 12mins.

3. Mix dressing for slaw, add all veggies and mix well.

4. Drain potatoes and return to pan, pour herb mixture over, stir gently, cover to keep warm and set aside.

5. Divide chicken between 4 skewers and place on hot baking tray, spoon any excess marinade over them and grill for 6-8mins, turning skewers every 2 mins to ensure even cooking. Make sure chicken cooked through and serve with the potatoes and slaw.
