Citrus basil mojito

Serves: 10 Freezing Time: 2 hours


Ingredients • 1 1/4 cups fresh squeezed orange juice • 8 tsp of honey • 2 tbsp lemon juice • 2 tbsp lime juice • 3/4 cup water • 8 fresh mint leaves • 8 fresh basil leaves • 2 tbsp rum (optional)


Method


1. Juice the oranges. To get 1 ¼ cups you will need roughly 2/3 oranges


2. Mix together the remaining ingredients in a blender until smooth


3. Add the optional rum at the final stage and add in the stick


4. Pour the mixture into moulds and freeze until solid


Layered blueberry &


lemonade ice lollies For those who want to add some colour to summer


Serves: 10 Freezing Time: 3 hours


Ingredients • 1 litre lemonade • A punnet of blueberries • Food colouring


Method


1. Pour a small amount of lemonade into each of the moulds. The stripes are created in stages, so only fill the moulds up about 1/3 of the way for this first one.


Blueberry and frozen


vanilla yoghurt For those who prefer something creamy


Serves: 10 Freezing Time: 12 hours


Ingredients • 2 cups blueberries, fresh or frozen defrosted • 1 tablespoon honey • 3 ½ cups vanilla yogurt


Method


1. In a small bowl, stir honey and blueberries together. Set aside.


2. In a blender combine blueberry mixture and 2 cups of yogurt, blend until a smooth consistency is achieved


3. Fill the moulds with 1½ cups vanilla yogurt. Layer blueberry mixture on top. Freeze for 12 hours, until completely frozen.


2. Add some blueberries and freeze until hardened.


3. Remove the mold from the freezer and add your sticks. Pour a second round of lemonade in each mold, again only fill another 1/3 of the way full.


4. Add more blueberries and freeze again.


5. Remove from freezer when the second layer has hardened. Add the last layer of lemonade and any food colouring if you wish. Add more blueberries and freeze until full hardened.
