afael Bernardez has been in fi sh farming since 1991, though he admits that he fell into it ‘purely by acci-


dent’. After a degree in biology in his native Spain, he went to the US to do a Masters in Marine Farming. He spent a couple of years in Japan before retuning to Spain in 1999 to work in the sales department of Spain’s second largest fi sh farmer,


Pina Menor, where he dealt with Canary Island farmed seabass and bream.


‘I was with them for fi ve years, in which time I turned the company around’, says Bernardez. ‘However, there was a glass ceiling in the company, which was very frustrat- ing, but it was not as frustrating as the focus of the company, which was 90 per cent on production,


with everything else placed much further down the priority list.’ As such, Bernardez explains, ‘they


weren’t really farming the fi sh to sell, they weren’t considering the customers’ needs. So when production was high, the sales price had to be reduced, and we could never guarantee consistent volumes of fi sh. Our customers would get a certain amount one


week, another the following week. There was simply no working relationship between the produc- tion and commercial sides of the operation.’


That all changed when Doug-


las ‘Frosty’ Smart took over as production manager. ‘Douglas was very sensitive to the commercial side of things’, explains Bernardez. He attempted to make production
