He adds, “Most out-of-the-box decisions can be made faster at independent prop- erties, as there is less of a hierarchical structure.” Breaux goes on to note that these properties rely more heavily on an “entrepreneurial” spirit.

The restaurants and catering department at Bear Creek serve directly from the resort’s organic vegetable and herb gar- dens. Chefs order from local vendors to eliminate long-haul shipments of food, beverages and supplies, helping to reduce the property’s carbon footprint. In addi- tion, the grounds crew does not use syn- thetic pesticides or herbicides when maintaining the trails and gardens of Bear Creek Resort.
