Class Listings Fabulous Fish Dishes
Create delicious fish dishes using a few basic techniques. Start with a mixed greens and garden vegetable salad with a homemade garlic dressing. We’ll grill fresh tuna steaks with a fabulous Mediterranean style relish served with pasta tossed with garlic in olive oil. Moist, flaky Atlantic salmon is slow baked with an oven dried tomato and dill butter sauce. Walleye Pike will be lightly breaded and pan-fried to a crispy golden brown and served with homemade tartar sauce and mashed potatoes. Key lime pie finishes topped with fresh whipped cream.

Chef Jeff Sandino has 28 years of cooking experience and has served as the executive chef for the original Buca De’ Beppo, Figlio and Sunsets Restaurants. Jeff is well versed in various ethnic culinary specialties.
Chicken En Croute Pasta, Pasta, Pasta
Our meal will begin when we use basil pesto to create a delightful appetizer with fresh boule bread, roma tomatoes, and mozzarella cheese. Next we'll toss the pesto with vermicelli and cream to make a delicious pasta topped with tomatoes and roasted pine nuts. "Cappellini", is next tossed with olive oil, garlic, tomatoes, basil and sautéed baby shrimp followed by "fettuccine alfredo primavera", a combination of fresh veggies, Parmesan and cream. We'll finish with a "Tartlet" and fresh fruit with an apricot glaze.

Northern Italian with Greek Accent
We’ll start with the classic Greek salad tossed in a zesty lemon, herb vinaigrette. Next, we’ll make fresh pasta and practice its versatility on two traditional Italian favorites starting with baked cannelloni stuffed with a variety of meats and fresh cheeses followed by lasagna, delicate spinach pasta layered with a bolognese meat sauce, creamy bechamel and grated parmesan. We’ll finish with decedent chocolate bread pudding served on raspberry sauce with fresh whipped cream.

We’ll begin with a Caesar salad tossed with fresh baked croutons and Romano cheese. Next, wrap a tender, sautéed breast of chicken in a flaky pastry shell with mushrooms and a rich port wine sauce. Create a delicious Jasmine rice blend using toasted almonds and dried cranberries and prepare steamed asparagus maltaise. Finish with chocolate decadence, a flourless chocolate torte served with raspberry sauce and fresh whipped cream.
