Infl ight caterer, HACOR, is building business fast in the City of Angels with heavy investment and a fi rm focus on friendships


Well known for the quality of its food and its personal service, HACOR has gone from being the inflight caterer of just one principal customer to catering eight airlines, seven of which rank in Skytrax’ Top 15 airlines. With a highly-motivated workforce and heavy investment in modern equipment and safety as a priority, the company has built its position by evolving to meet demand. The culinary staff employed reflect the needs of the airline customers so include French executive chef, Christophe Cosnier; Japanese chef Yoshikazu Endo; Morrocan sous-chef Driss Battagi, who works in the company's Halal kitchen; Mexican sous-chef, Ramon Jimenez; Filipino chef, Carl Orlanes; and two Taiwanese chefs, Benny Wang and Ping.


Asian and Western cuisines dominate the dishes supplied and HACOR reports strong trends towards menus which are made with socially responsible and sustainable products. There is also a growing demand for products that have local flair and identity, so HACOR’s chefs have worked with celebrity chefs and other locals to create airline-appropriate interpretations of menus which reflect the local Los Angeles culture and sub-cultures. Tomu Odawara, director of marketing, says: “Our goal is to continue to invest in our core foundations: our building, equipment, structure and staff, and to become the preferred caterer for airlines out of LAX. With constant and proactive upgrades to our catering unit, new refrigerated trucks, new dishwashers and on-going training for our staff, our aim is to ensure our customers

receive top service and supplies through every part of their involvement with us. “We are totally committed to quality and have bolstered our hygiene department with additional staff and added a new air shower through which all staff access the main production floor. All critical entrances have double-recessed nylon curtains too. “The recent addition of new MEIKO dishwashing machines reflects that commitment to quality too. These are costly investments but thanks to their modern features and performance standards, equipment put through these comes out cleaner than ever. We exclusively have multiple Meiko dishwashers which we’ve added in the last two years and will be the first US kitchen to install an OMORI cutlery

The company has also built its profile in LA by getting involved with local events such the LA Food Bank where its staff has packed food provisions for the needy, and a Midnight Mission, serving food for the homeless.
