As loved as Italian food is, it's often synonymous with indulgence. One Italian company looking to dispel this image in onboard catering is Mediterraneae, a new brand offering healthy nutritional Italian food. The Mediterraneae range is designed to meet the five most-requested special dietary categories in the air: low fat, low calorie, low salt, diabetic and vegetarian lacto-ovo. The range includes a risotto with
forest mushrooms and Italian herbs, a Mediterranean pizza and ginger and cocoa muffins. It is based on the fact that extra virgin olive oil can actively lower cholesterol and aid weight reduction. Mediterraneae uses nutritionally-favourable patented pasta and flour which delays carbohydrate absorption, alternative sweetners like Erythritol and agava syrup and uses South American root vegetable and superfood maca – certainly fusion food!
ITALIAN METHODS Even with authentic produce, incorrect preparation can still ruin that authentic taste. Parma-based Nilma SpA was founded in 1955 and has been developing machines and systems for the catering industry ever since. Its latest is Pastaline, a pre- programmable machine for cooking and chilling large amounts of pasta to the highest standards.
This means controlling the cooking
time, temperature and water to pasta ratio, avoiding wasted starch and gluten. The production cycle works in four stages: cooking, chilling in cold water, storage in a refrigerated cell and reactivation in boiling water or an oven for a just-cooked taste. Iacobucci HF is another Italian
company innovating in production methods and notoriously proud of being made in Italy. This year it introduced a new Galley Inserts Design Line, which includes the only induction oven in the aviation industry and the only product developed to cook fresh foods on board. It incorporates an intuitive interface, allowing simultaneous cooking of different foods. Iacobucci claims that “rice, pasta,

restaurant standards" – a claim that will be tested in due course. Iacobucci Equipment and Services has offices in Ferentino as well as Dubai and Switzerland. It has designed and manufactured half and full-size trolleys for Italian rapid trains company ITALO's food and beverage service.
