BUSINESSES Kendall Meat Company TJ Banning, one of the four partners who this year
opened the Kendall Meat Company at 731 Erica Lane, says their store isn’t just a butcher shop. “We are more than just meat,” Banning says. “We
do have a huge selection of meats and poultry and also fresh seafoods, but we also have wet salads, coffee, spices, Oberweiss ice cream, Bindi brand desserts, and fruits and vegetables, like apples and sweet corn, in season.” Banning, who, in addition to being the owner
of Yorkville’s Rosatti’s Pizza, is in charge of marketing for the partnership, says some of the customers’ favorites so far include a jerky dip, bacon cheddar pub burgers, onion jam meatloaf, and meat truffles, which were developed by another partner, Joe Peretta, who is the master chef. Banning described the truffles as similar to meat loaf. “Joe is always coming up with new things he’s
created,” Banning says. Another customer favorite, Banning says, is jerky.
Te store carries several varieties, including beef, turkey and alligator.

veteran-owned. In addition to in-store shopping, the market also offers a delivery service. Yonas Hagos, who owns several other businesses
in Yorkville with partners Peretta and operations manager Brandon Partridge, came up with the concept for the new meat market because he is constantly trying to fill what he sees as needs in the area, according to Banning, who is new to the partnership. “Yonas loves Yorkville,” Banning says. “Tis is a
niche he saw, a fresh market, that needed to be filled.” In addition to the meat market, the four partners
own Rosati’s restaurants in Plainfield and in Largo, Florida, and this summer is planning to open an upscale western- themed restaurant in Yorkville called Dakotas.
