CAREERS IN THE SERVICE INDUSTRY

This introductory programme combines classroom theory and practical learning to provide a taster in a range of subject areas. You will learn core knowledge and specific skills that underpins each of these service specialisms that will allow you to progress onto a higher level of study within your chosen area.
You will undertake an assortment of study components including core and specialist modules, a tutorial programme, and the opportunity to improve your GCSE Maths and English. The course will also support you in developing your study skills.
You will study the following modules:

Introduction to the catering and hospitality industry
• Real work experience within the Taw Restaurant
•
Introduction to the hair and beauty sector
• Presenting a professional image in a salon
ENTRY REQUIREMENTS You must hold four GCSEs at grade 2 or equivalent (or above), preferably including Maths and English.
PROGRESSION Upon successful completion of this course, you can progress onto a Transition to T Level course in Professional Catering, Hair or Beauty; or an apprenticeship.
CATERING
Level 2 | Duration: 1 year North Devon | FTB483
This T Level Transition Programme has been developed to help you gain the knowledge, skills and work experience needed to help you progress onto your chosen T Level.
You will gain the following: •

Industry-based work experience
Relevant English, maths and digital skills
• Focused individual support and personal development
The course encompasses the Technical Certificate in Professional Cookery, the Award in Food Safety in Catering and the Award in Professional Food and Beverage.
You will study the following modules:

Boiling, poaching and steaming, stewing and braising
• Baking, roasting and grilling
• Deep frying and shallow frying
• Cold food preparation
• Principles of becoming a professional chef
• How to use knives, tools and equipment
• How to work safely and hygienically
ENTRY REQUIREMENTS You must hold four GCSEs at grade 3 or equivalent (or above), preferably including GCSE Maths and English.
PROGRESSION After completing this qualification, you can progress to our Catering T Level at Level 3.

Technical knowledge and practical skills
CATERING T LEVEL
Level 3 | Duration: 2 years North Devon | FTB552
T Levels ensure you meet the needs of industry by combining classroom theory, practical learning and industry placement.
This programme will teach you all aspects of cooking and the safe handling of food and is suitable for anyone looking for a career in catering profession.
You will study the following modules:
• Producing quality dishes using fresh ingredients
• Leading in the production of quality dishes using prepared ingredients
• Adapting quality dishes for specific customer requirements
• Producing quality dishes for large groups of people
• Producing quality dishes for a central production unit consumed in different types of locations
You will study Professional Catering as your occupational specialism in year two. In addition, you will undertake a 315-hour (minimum) industry placement.
ENTRY REQUIREMENTS To be accepted onto this programme, you must hold at least five GCSEs at grade 4 or above, including English and Maths.
PROGRESSION Successful completion of this qualification will open up a wide range of possible careers in the catering sector. It will give you an advantage when applying for a job in the industry or when progressing to further study.
