Colby enjoys a relaxed breakfast with his girls in the mornings, and often heads to his parents’ house to pick up eggs for his lunch. “I always make sure I have a good hearty dinner — and generally try to eat plenty of fruit and drink lots of water.”
“I love a good curry, lamb and chorizo — but I really dislike artichokes. We enjoy eating out now and then. A great family-friendly place to eat is The Chequers, and my girlfriend and I love The Blacksmith Arms.
“The Isle of Wight is awesome for quality, local produce. And we’re really lucky here at The Cow to have our own allotment serving us with delicious, seasonal fruit and vegetables. Local resident and gardener Barry tells us what is ready to be harvested each Monday, and we plan our specials boards based on this. We also liaise with the local fishmonger and Adam from Island Foods, who works with me to provide the very best quality cuts of beef.
“We serve eight really quirky cuts at The Cow. I’ve been up to see how each cut comes off, so I can really give first-hand recommendations to our customers. Having an open kitchen also allows customers to see their meals being prepared. We have lots of people book tables specifically to be able to do this.
“Business has doubled in the four years that I have been there, and we’ve recently got lots of new kitchen equipment to meet demand, including a Rational oven, walk in fridge-freezer and more accessible food stores. We also updated the air conditioning and heating so the restaurant is a really comfortable place to enjoy a meal all year round.
“We’ve got a great team of chefs, including sous chef Mark, who’s a really good number two, which is so important. We also have chef de parties, Brandon, Carl and Wayne and
