The Sunday roast


There’s nothing like getting together with friends and family to enjoy a traditional Sunday roast. The Island has plenty of delicious local produce to prepare at home, or a wide variety of superb eateries to choose from, to take the stress out of cooking it yourself. Here are a few ideas from just some of the people providing us with the best local Sunday roasts which we hope will help inspire your next Sunday get-together


Roast potatoes


At The New Inn, Chef Tony Worthington recommends chunky cut Maris Piper potatoes to create the perfect roastie. Parboil in salted water until the edges are tender and starting to crack. Drain into a colander, and leave to steam and dry until they fluff up sl ightly. Then heat goose fat in a tray until smoking hot, add rosemary, garl ic and the potatoes. Season with salt and pepper, add a couple of knobs of butter and cook at 180degrees for 25-30 mins turning hal f-way through. Remove once they are thoroughly cooked and as crispy as you like them.


Topside of Island beef


At Bluebel ls cafe on Briddlesfrod Lodge Farm at least one local meat is served at every Sunday lunch, with the most popular being roast top side of beef from Cheverton Farm in Shorwel l . The chefs prepare this by rubbing cracked black pepper and coarse salt into the fat around the outside of the joint. It’s then covered in foi l , placed in a shal low water bath and cooked slowly for approximately 3 hours depending on its size. Once cooked, the succulent meat is left to rest before sl icing. Whatever roast meat is on the menu, the Briddlesford team always know the Island farmer who reared the animal, and you’ll find Briddlesford’s own cream, cheddar, gouda or mi lk included in the ingredients for the accompanying tasty caul i f lower cheese or Yorkshire puddings.
