41 Tortilla


Quiche can just be a bit of pain to make if you’re in a hurry. Making and chilling the pastry, baking the tart case blind, gently cooking the filling; too much effort. Tortilla is basical- ly the same but without the pastry. Great for breakfasts, brunches, picnics and suppers. Here’s our basic recipe from friends in Spain with sweet and slow cooked onions and potatoes and great eggs – always such as surprise when 3 of our most basic ingredients can taste so good. You can add some roasted peppers, top with some grated cheese, add a few chunks of ham or wilt in a small bag of spin- ach leaves to ring some changes. It’s also great, if not essential, to make in advance and you can chop it up into chunks to feed a party.


600g floury potatoes, peeled and cut into slices the thickness of a pound coin 1 onion, peeled and very thinly sliced 6 free-range eggs 12 tbsp olive oil Salt and pepper


1. Put the potatoes and onion in a large bowl and mix with the olive oil. It will look like a lot of oil but you want to braise the veggies until tender, not fry them. Season well. 2. Heat a large non-stick frying pan and add the potato mixture. Cover and cook very slowly until the potatoes are tender but not coloured and the onions are soft. This takes at least 45 minutes. 3. Gently drain the mixture of any excess oil but keep the oil to use in another dish. 4. Beat the eggs together in a bowl and season well. Add the potato mixture. Mix gently so you don’t break up the potatoes. 5. Put 2tbsp of the oil back in the pan and add the potato/onion/egg mixture. Cook gently over a very low heat until the tortilla is mainly set. 6. Put a large plate over the pan and turn the pan upside down so the tortilla lands on the plate. Slide the uncooked side of the tortilla back into the pan and finish cooking for about 5 minutes. 7. Turn the tortilla out of the pan again and serve warm or at room temperature in wedges.
