1 celery stalk, finely chopped 500 gm shredded (sliced) cooked turkey (prefer dark meat-breast is dry and might fall apart in the sauce, unless cut thick) 3 cups marinara sauce (or tomato sauce) 1/4 cup chopped fresh basil leaves Salt and freshly ground black pepper to taste 500 gm spaghetti Parmesan cheese


Directions Heat the oil in a large


frying pan over medium heat. Add the onion, garlic carrot, and celery and sauté until translucent and tender, about 5 minutes, if it gets dry don’t be afraid to add a little more olive oil. Add the turkey and sauté 1 minute. Add the marinara sauce. Lower the heat to medium-low and simmer gently for 15 minutes to allow the flavors to marry, stirring often. Add fresh basil and parmesan cheese at the end. Season the sauce, to taste, with salt and pepper Meanwhile, cook the


spaghetti in a large pot of boiling, salted water until just tender, but still firm to bite (al dente), stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid. Add the pasta to the sauce and toss to coat, adding enough reserved cooking liquid to moisten as needed. Serve and sprinkle with parmesan cheese.
