FRENCH ONION SOUP
The earthy and gutsy character of French onion soup makes it ideal cockle-warming stuff . Large paper cups or bowls are ideal here, as you can put the grated cheese into the base and stack them before you leave, with no washing up to follow.
50g unsalted butter 3 onions, peeled, halved and thinly sliced
150ml white wine 900ml chicken stock Sea salt and black pepper 75g grated Gruyère 2 tbsp brandy (optional) Crusty bread, to serve

1 Melt the butter in a large saucepan over a medium heat and fry the onions for 20- 30 minutes until a deep even gold, stirring frequently. It’s really important to take your time here and not rush.
2 Add the wine and simmer until well reduced, then add the chicken stock and some seasoning, bring to the boil and simmer over a low heat for 10 minutes. The soup can be made in advance, in which case reheat and pour boiling hot into a wide-necked food fl ask.
3 Divide the Gruyère between four cups. Pour the hot soup over and add a little brandy, if wished. Serve with bread.
