Ingredients


8 Free range eggs 16 Slices of oak smoked salmon 4foz Double cream 2oz Butter Salt and pepper 8 Slices of wholemeal bread 1 Lemon


Method


Whisk the eggs and cream together and season. Melt the butter in a heavy bottomed pan and cook eggs to your liking place onto warm toast and cover with smoked salmon serve with wedge of lemon.
