over 20 years of expertise in senior marketing and category management roles in diverse food and beverage categories. Catherine holds a master’s degree in marketing from ESCP Business School and a master’s degree in food science and agribusiness. Here, she sits down with Kiran Grewal, Editor at Kennedy’s Confection to discuss the alternative ingredients space for dairy and proteins.
Can you tell us about the key trends driving the increased consumer demand for plant- based products, especially considering health and sustainability concerns? Consumer tastes and behaviours are evolving rapidly, like the world we live in. Climate change, economic instability, supply chain

issues, and advancements in technology mean we must constantly adapt and anticipate what’s next for the future of food. At Givaudan, we go beyond great taste to create food experiences that do good and feel good, for body, mind, and planet – and this means we are busy co-creating and preparing for the future. Regarding the increased consumer demand for plant-based products, in collaboration with our partner, Synthesis, we looked at the possible future of dairy alternatives in our Dairy Alternative Futures report – and at our recent report event. In our Givaudan Plant Attitude dairy research (2021), we found that there is a shift to alternatives sustained by the consumer’s desire for change, with 4 in 10 people reducing their consumption of animal origin.
