igh-pressure processing (HPP) is a non-thermal (5–20°C) conservation method applied mainly to food and beverages. The technology is based around high hydrostatic pressure that is applied for a period of time, ranging between a few seconds and several minutes. The pressure is applied instantly and

evenly, achieving an effect equivalent to that of pasteurisation, while also providing a series of distinct advantages. It inactivates harmful microorganisms (listeria, salmonella, vibrio, norovirus, for example) and undesired food modifiers, such as lactic acid bacteria and coliforms. The product’s shelf life is thus increased, allowing the reduction or elimination of preservatives. This creates a healthier and more natural product that still meets export requirements and generates less food waste.


The manufacturing process Since HPP is applied to already-packed goods, the chance of recontamination is reduced. This can then be applied to a full range of food productions – from meat products, juices and drinks to children’s food, avocado dips, precooked meals, dairy products, fish, seafood and sauces. Most importantly, HPP does not affect food taste or nutritional characteristics. The technology is environmentally
