After suffering from IBS, she went to see a dietician, who recommended she tried a whole-food diet after living off ‘low-fat’ and ‘low-calorie’ meals. “I ended up eating in this health cafe so much they gave me a job,” she laughs. It was her time in Australia that inspired her bestselling cookbook, Get the Glow. “People would say, you look really


healthy, you’re glowing. And I thought that was such a lovely word. I’m a firm believer that when look after your insides, you’ll shine on the outside,” she explains. “My food philosophy certainly changes and evolves as time goes on, but I think I’ve always had a consistency of recipes that are really easy to make. Spinach, leek & potato soup Ingredients 1 onion 1 leek 2 garlic cloves 3 tbsp of olive oil 150g potatoes 600ml stock 100g spinach Salt and pepper 1 can of coconut milk


Directions • In 2 tbsp of olive oil, fry the chopped onion, garlic and leek for 10 mins.


• Peel potatoes and leave the peel to the side. Cut potatoes into quarters.

• Add in spinach and stir until it wilts, then blend until smooth. If you want the soup to be thinner, add water or more stock.


• Pop 1 tbsp of olive oil in a pan and fry the potato skins with salt and pepper for 5-10 mins until crispy.


• Top with yoghurt, chilli flakes and crispy potato skins.


Black bean brownies Ingredients 80g chocolate 3 tbsp cocoa powder 120g coconut sugar


3 eggs 1 tin black beans 1 tsp baking powder 1 tsp vanilla extract Pinch of salt 3 tbsp coconut oil


Directions • Mash the black beans and stir in the eggs followed by the cocoa powder, coconut sugar, melted chocolate, coconut oil, vanilla, baking powder and salt.


• Bake at 180C for 25 minutes and enjoy.
