After a little while out on the road, the couple decided the double decker was a little too big for certain venues, so they sold it on and bought the current Tansy’s Pantry, a 1971 Bedford Embassy J2, which Ollie fitted with everything they needed for a mobile kitchen.
Jaime decided to make the move to veganism some 18 months ago and Tansy’s Pantry followed suit. She was already used to using dairy alternatives as her daughter had been diagnosed with a dairy allergy as a baby.
“I’m really into the nutritional side of things,” says Jaime. “I used to think we needed dairy for calcium, but I know now that you can get it from so many other places, for example nuts, seeds and greens such as watercress and broccoli. I want people to know that it’s a lot easier than you think.”

As well as attending events around the Island during warmer months of the year, Jaime caters for many prestigious private events. Over the years, Jaime has provided private catering for a party for Ben Ainslie, an Ellen MacArthur Foundation corporate event and a wellness retreat, by Balance and Glo in Yarmouth, as well as a number of weddings.
Jaime also spent some time baking and decorating occasion cakes, learning how to create intricate details with the help of YouTube videos.
“While I absolute love running Tansy’s Pantry, my dream is to one day own a cafe made of bricks and mortar,” says Jaime.
The iconic bus has become famous for its delicious Sosmix burgers, its spicy chickpea and lentil dahl, vegan nachos, falafels and mouthwatering cakes, including the Clementine Chocolate Orange cake, which is made using vegan-friendly ingredients, including flaxseed.
