Spiced Sparkle
A whisky based sparkling cocktail with all the spices of Christmas to warm your cockles this winter.
For the syrup:
(makes enough for 10 cocktails) • 8tbsp/175g honey • 30g cinnamon • 15g fresh ginger, grated • 2tbsp ground cloves • 250ml orange juice
Festive
French 75 We all know gin is in again this year so welcome in those special Christmas moments with this bubbly brunch beverage that’s zingy and fresh.
Per cocktail: • 45ml dry gin
• 10ml freshly squeezed lemon juice
• 1 teaspoon sugar • Champagne or sparkling wine
• Long thin lemon spiral and cocktail cherry to garnish Instructions:
Shake gin, lemon juice and sugar in a cocktail shaker with ice until well chilled, about 15 seconds.
Strain into a champagne flute.
Top with champagne or fizzy wine and garnish for an extra special touch
Per cocktail: • 2 tbsp syrup • 35ml whisky or borboun • Prosecco to top up glass • Fresh rosemary sprigs (optional)
Instructions:
To make the spiced syrup, gently cook the ingredients in a small saucepan until it starts to bubble.
Remove from the heat and leave it to cool.
Once cooled, add 2tbsp syrup and the measure of whisky in a mixing glass and stir. This is per serving.
Strain into a cocktail glass before topping up with Prosecco. Garnish with a sprig of rosemary to impress your guests.
White
Christmas Mojito
Bring tropical flavours to those cold winter nights with this coconut and lime cocktail.
Makes 4-6 cocktails: • 230ml lime juice
• 10g fresh mint leaves plus more for serving
• 50g sugar • 125ml white rum
• 70-100ml coconut rum dependent on your taste
• 1 can coconut milk • Sparkling water to top up • Pomegranate seeds for garnish
Instructions:
In a large pitcher or jug, muddle the lime juice, sugar and mint leaves until the leaves have broken down.
In a blender, combine both rums with the coconut milk and pulse until smooth. Pour over the mint/ lime mixture and stir to combine. Chill until ready to serve.

To serve, divide ice among glasses and fill halfway with the mojito mix. Top with sparkling water and garnish with mint and pomegranate.
Mistletoe
Mocktail Enjoy all the fun of cocktail making without the alcohol with this ginger beer based drink.
Per mocktail: • ¼ tsp of lime juice • ½ tsp honey • 3 mint leaves • 2 cranberries • Ginger beer (non-alcoholic) To garnish: • 3 cranberries • 1 sprig of rosemary • White sugar • Lime juice
Instructions:
Place mint leaves, 2 cranberries, honey and lime in a dish and use a muddler to mash and set aside.
To make the sparkling rim for each glass, squeeze lime juice into a small dish and sugar into another. Dip the rim of the glass in the lime then in the sugar.
Place the mash mixture in bottom of the glass, add crushed ice and fill with ginger beer.
Garnish with a sprig of rosemary and 3 cranberries
