garlic in a saucepan for about 5 minutes. The idea is not to fry the garlic but to infuse the oil and soften the garlic’s fl avour. Remove the pan from the heat and take out the garlic, chop it fi nely and return it to the pan along with the chickpeas. Stir them around in the warm oil, season with a little salt and pep- per, and then set aside to cool.


3 In a dry frying pan, toast the sesame and fennel seeds until the sesame seeds dance around and turn gold. Tip the seeds onto a plate and carefully toss the feta around to coat each dice in a speckled crust.


4 Put the onion with the vinegar, the chickpeas with their garlic oil, the salad leaves, cucumber, parsley and most of the mint in a serving bowl and mix carefully. Now add the feta and beetroot and toss carefully just a couple of times, otherwise the entire salad will turn a milky pink.


Taste and adjust the seasoning if necessary.


5 Sprinkle with pomegranate seeds and a few mint leaves and serve with toasted pitta or sourdough bread and a dash of extra-virgin olive oil.


HOW ABOUT?


❤ adding a few pitted Kalamata olives.


❤ adding some roasted pista chios along with the pome granate.


❤ adding grilled or chargrilled sliced aubergine.


❤ using fresh coriander instead of mint.

❤ serving this alongside grilled lamb cutlets, or lamb leg steaks. Marinate them in lemon juice, olive oil, oregano and grated onion for a few hours. Season with salt and pepper just before grilling.

❤ 3 garlic cloves, halved ❤ 500g home-cooked chick peas (garbanzo beans) or 2 x 400g cans of chickpeas

❤ 100g baby spinach or other salad leaves


❤ Half a cucumber, diced


❤ Large bunch of fl at-leaf parsley, chopped

❤ Seeds from 1 pomegranate
