How to brew the perfect cup of tea


ACCORDING TO THE EXPERTS AT DJ MILES


1 Use good quality tea


2 Let the cold water tap run for a few seconds


3 Empty the kettle of any residual water


4 Fill the kettle with freshly drawn cold water and switch on


5 Rinse out your teapot and pop in the microwave for seconds to warm through.


6 Use 1 teabag (or 1 teaspoon of loose leaf tea) for 2 cups, 2 teabags (or 2 teaspoons of loose leaf tea) for 4 cups well positioned in the bottom of the pot


7 Slice your lemon, or decant a little milk into a jug


8 Bring the teapot to the kettle and when it comes to a good boil pour into the teapot. Stir and wait 3 to 5 minutes


9 Using the milk or lemon fi rst, pour yourself a lovely cup of tea


10 Retire to your favourite chair, bringing one or two biscuits with you


Once the tea is in our


warehouse we are able to use it, but it may be many months before we do so. This is because we buy when the season is right. In the case of our Assam teas from India we will be only buying in the months of June, July and August. We need to have bought enough tea of this type in the three months of activity to last us until the following season. We buy half of our Assam tea in vacuum packed cartons so that when the time comes to use the tea it is as fresh as the day it was packed. A few of our teas will be sold on as single estate teas, but most will be blended together to allow us to have a consistent product to sell. Some of our blends are complex and can have 12 to 14 different components. Each blend takes us many days


to refi ne, where we are tasting and making small changes over and over again.

Today we know that tea is packed with antioxidants that can help to maintain your health as part of a balanced diet and healthy, active lifestyle.
