TEA SMOKED MACKEREL


Have you ever tried to smoke your own fi sh with tea? Now you can!


❤ 2 mackerel fi llets per person, skin on


❤ Variety of beetroot ❤ Salt and pepper ❤ 2 teabags ❤ 100g muscavado sugar ❤ Olive oil


1 Prepare a wok for smoking: cover the bottom tightly with baking foil, place a large handful of muscavado sugar and 2 earl grey teabags at the bottom, top with a steaming basket, mackerel (skin side down) and cover tightly with


more baking foil.


2 Place on the heat and turn to medium heat.


3 As soon as you can smell the sugar and tea, turn the heat down and smoke for 10 minutes.


4 Turn the heat off and leave to cool down for another 10 minutes.


5 For the beetroot salad, cube the beetroot and pop on a baking tray with a generous drizzle of olive oil and salt, cover with foil.


6 Bake at 200C for 40 minutes until a cutlery knife slides through.


7 Serve the mackerel with the beetroot, greens and horseradish cream
