BUFFALO CHICKEN SALAD This no-cook salad makes a great lunch


or light supper for when you need to get something on the table in a flash.


Matchstick carrots Skip the box grater and grab a bag of pre-shredded carrots for summer salads.

3 stalks celery 1 head Boston lettuce ¼ cup Louisiana- style hot sauce ¼ cup ranch dressing 2 tsp white wine vinegar


3 cups shredded rotisserie chicken 1 cup shredded (matchstick) carrots ¼ cup crumbled blue cheese


STEP 1 Thinly slice the celery. Separate the leaves on the head of lettuce. Tear any larger leaves. STEP 2 In a large bowl, whisk the hot sauce, ranch dressing, and vinegar. Add the chicken, carrots, and celery. Toss to combine. Season with salt to taste. STEP 3 Divide the lettuce among 4 plates. Top with chicken mixture. Sprinkle the blue cheese on top.
