Remove both ends of the fruit so it sits flat on your cutting board.
Use a sharp knife to remove the peel and white pith, following the curve of the fruit.

Jump-start browning by leaving your empty sheet pan in the oven as it preheats. Cut vegetables to the same size so they brown and cook evenly. Pat meats and veggies dry so they get extra crispy. Space out veggies on the sheet pan so they brown instead of steam. Rotate the sheet pan halfway through for even cooking.
