CHEDDAR-CHIVE BEER BREAD

3 cups self-rising flour ¼ cup sugar ½ tsp onion powder ¼ tsp salt 1 (12 oz) bottle lager
1 cup shredded extra-sharp Cheddar, divided 3 tbsp
chopped chives 2 tbsp butter, melted, plus more for greasing

ROASTED PORK WITH BEER- MUSTARD GLAZE

1 (12 oz) bottle amber ale 3 tbsp stone ground mustard
3 tbsp honey 1 tsp garlic powder 1 (1¼ lb) pork tenderloin
STEP 1 Preheat oven to 425°F. To a small pot, add the beer. Bring to a boil on high and boil 8–10 min., until reduced to ¼ cup. Transfer to a medium bowl and let cool.
STEP 2 Into beer, whisk the mustard, honey, and garlic powder until smooth. STEP 3 Season the pork with salt and pepper. Add to a baking dish and brush pork with half of beer glaze. Roast pork 10 min. Brush with remaining glaze, and roast 10–15 min. more, until pork is cooked through, registering 145°F on an instant read thermometer. STEP 4 Let pork rest 10 min. Slice and serve.

STEP 1 Preheat oven to 350°F. Grease 9x5-inch loaf pan. STEP 2 In a large bowl, stir together the flour, sugar, onion powder, and salt. Stir in the beer until dough comes together and is well mixed. Fold in ¾ cup Cheddar and the chives. Transfer batter to prepared pan. Bake 30 min. STEP 3 Brush top of loaf with the butter and sprinkle with remaining ¼ cup Cheddar. Bake another 20–25 min., until top is golden brown and toothpick inserted in center comes out clean. Cool on wire rack 10 min. Remove bread from pan and serve warm.
