CHOCOLATE CHIP PANCAKE MIX PREP TIME 5 MIN. – COOK TIME 0 MIN. – READY IN 5 MIN. – MAKES 3 JARS
8 cups all-purpose flour (about 2½ lbs)
6 tbsp baking powder 4 tsp baking soda 2 tsp salt
6 tbsp sugar
2 (12 oz) bags semisweet chocolate chips 3 (1 qt) jars
STEP 1 In a very large bowl, whisk the flour, baking powder, baking soda, salt, and sugar until well combined. Stir in the chocolate chips. STEP 2 Divide mixture among the jars and seal.
INSTRUCTIONS TO INCLUDE WITH EACH JAR To make 1 batch pancakes (4 servings: in a large bowl), whisk 2 eggs, 2 cups milk, and 2 tbsp melted butter until smooth. Stir in half of pancake mix (about 2¼ cups) until combined (batter will not be smooth). Heat a greased nonstick skillet over medium heat. Using a ¼ cup measure, scoop batter into pan. Cook 2–3 min. per side, until golden brown.
