crudo — raw hamachi, red snapper and a dewy scallop graced with fresh wasabi and threads of beet — follows. Some of these dishes I’ve had before, but the repeats are as exciting as when I was first introduced to them. And Monis’s latest creations are among the most thrilling combinations in town: Custardy uni, slices of geoduck, fresh mint and crisp bits of turmeric-yellow crepe nestled in a ruffle of lettuce might be the best taco you’ve ever encountered. Anywhere I can watch a pro carve raw fish or tend bites of food over a flame is where I want to be. The multiple menus are daunting, but I like to mix and match when composing a meal. The sushi is as it should be, a finger of pristine fish on a small pad of barely warm rice; yellowtail, fatty tuna and wild Japanese horse mackerel are among my favorites. Nuggets of fried chicken spiked with ginger, and skewers of pedigreed beef and pork, hot off the charcoal fire, show off the talents of the robata cooks. Kushi’s specials are just that; look for bracing live uni, served on crushed ice in its spiky shell. The latest fashion in Tokyo, meat maki, is

Not just an amazing meal. an amazing evening.
